Ingredients

or the Blackened Salmon:

  • 4 salmon fillets, skin-on
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

For the Mango Salsa:

  • 1 large ripe mango, peeled and diced
  • 1/2 red bell pepper, finely chopped
  • 1/4 red onion, finely diced
  • 1 jalapeño, seeded and minced (optional)
  • 2 tbsp fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  • Prepare the Mango Salsa:
    In a medium bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Mix well and refrigerate.
  • Prepare the Blackening Seasoning:
    In a small bowl, mix together paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper.
  • Season the Salmon:
    Pat salmon fillets dry. Brush both sides with olive oil and generously coat with the blackening seasoning.
  • Cook the Salmon:
    Heat a cast-iron skillet over medium-high heat. Add 1 tbsp olive oil. Cook salmon skin-side down for 4-5 minutes per side until cooked through with a dark crust.
  • Serve:
    Transfer salmon to plates, top with mango salsa, and serve immediately.
