Description

Buttery, crumbly pie bars layered with a sweet blackberry filling — a perfect combination of tart and sweet for summer gatherings or an indulgent snack anytime.


Ingredients

1 cup unsalted butter, cold and cubed

2 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

¼ teaspoon salt

1 large egg

2 cups fresh or frozen blackberries

½ cup granulated sugar

2 teaspoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper and set aside.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add the egg and mix until the dough starts to come together.
  4. Press two-thirds of the dough into the bottom of the prepared baking pan to form an even crust.
  5. In a medium bowl, stir together the blackberries, sugar, cornstarch, lemon juice, and vanilla extract until the berries are well coated.
  6. Spread the blackberry mixture evenly over the crust.
  7. Crumble the remaining dough over the top of the berry layer.
  8. Bake for 38–42 minutes, or until the top is golden and the filling is bubbling.
  9. Let the bars cool completely before slicing into squares.

Notes

Fruit Swap: You can swap blackberries for other berries like raspberries, blueberries, or strawberries.

Add Spices: A pinch of cinnamon or nutmeg can add extra flavor to the crust.

Lemon Zest: Adding lemon zest to the filling can enhance the citrus flavor.

Storage: Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days.

Reheating: Warm in the oven at 300°F (150°C) for about 10 minutes to reheat.
