Ingredients
1 cup unsalted butter, cold and cubed
2 ½ cups all-purpose flour
½ cup granulated sugar
½ teaspoon baking powder
¼ teaspoon salt
1 large egg
2 cups fresh or frozen blackberries
½ cup granulated sugar
2 teaspoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C). Line a 9×13-inch baking pan with parchment paper and set aside.
- In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the egg and mix until the dough starts to come together.
- Press two-thirds of the dough into the bottom of the prepared baking pan to form an even crust.
- In a medium bowl, stir together the blackberries, sugar, cornstarch, lemon juice, and vanilla extract until the berries are well coated.
- Spread the blackberry mixture evenly over the crust.
- Crumble the remaining dough over the top of the berry layer.
- Bake for 38–42 minutes, or until the top is golden and the filling is bubbling.
- Let the bars cool completely before slicing into squares.
Notes
Fruit Swap: You can swap blackberries for other berries like raspberries, blueberries, or strawberries.
Add Spices: A pinch of cinnamon or nutmeg can add extra flavor to the crust.
Lemon Zest: Adding lemon zest to the filling can enhance the citrus flavor.
