Ingredients

  • 1 1/2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, whisk together oats, flour, baking soda, cinnamon, and salt. Set aside.
  • Cream Butter and Sugars: In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Add Wet Ingredients: Beat in the egg and vanilla extract until fully combined.
  • Combine Ingredients: Gradually mix dry ingredients into the wet mixture until just combined. Avoid overmixing.
  • Add Mix-Ins: Fold in chocolate chips and nuts (if using).
  • Shape Cookies: Drop spoonfuls of dough (about 1 1/2 tablespoons) onto the baking sheets, spacing them 2 inches apart.
  • Bake: Bake for 10-12 minutes until the edges are golden and centers look slightly underbaked.
  • Cool: Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra chewy cookies, add 1 tablespoon of brown sugar and slightly underbake.
  • Chill dough for 30 minutes to prevent spreading.
  • Optional add-ins: shredded coconut or dried fruits like raisins or cranberries.
