Description

Amazing Forgotten Chicken is a simple, no-fuss baked chicken and rice dish that practically cooks itself! This comforting, creamy meal is packed with flavor, making it perfect for busy weeknights. With tender chicken, a rich sauce, and perfectly cooked rice, this one-pan dinner is effortless yet satisfying.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth or water
  • 1 packet onion soup mix

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the baking dish by greasing a 9×13-inch dish.
  3. Mix the base – In the baking dish, combine uncooked rice, cream of mushroom soup, cream of chicken soup, and chicken broth or water. Stir to blend.
  4. Add the chicken – Place the chicken breasts or thighs on top of the rice mixture.
  5. Season – Sprinkle the onion soup mix evenly over the top.
  6. Cover tightly – Use aluminum foil to seal the dish completely to trap moisture.
  7. Bake for 1 hour 30 minutes, or until the rice is tender and the chicken is fully cooked (internal temperature of 165°F/75°C).
  8. Rest before serving – Let sit for a few minutes, then fluff the rice and serve warm.

Notes

  • For a cheesy version – Sprinkle shredded cheddar cheese on top before baking.
  • For extra veggies – Add mushrooms, bell peppers, or peas to the rice mixture.
  • For a spicy kick – Add cayenne pepper or drizzle with hot sauce.
  • For brown rice – Increase liquid and extend baking time by 20-30 minutes.
