Ingredients

Crust

  • 1 cup graham cracker crumbs
  • 2 tbsp granulated sugar
  • 4 tbsp unsalted butter, melted

Cheesecake Filling

  • 8 oz cream cheese, softened
  • ⅓ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup sour cream

Berry Swirl

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Instructions

  • Prepare the Berry Sauce:
    • Cook berries, sugar, and lemon juice in a saucepan over medium heat for 5-7 minutes until softened. Strain for a smooth sauce and let cool.
  • Make the Crust:
    • Preheat oven to 325°F (165°C).
    • Mix graham cracker crumbs, sugar, and melted butter.
    • Press 1 tbsp of the mixture into each lined muffin tin cup and bake for 5 minutes. Cool.
  • Prepare the Cheesecake Filling:
    • Beat cream cheese and sugar until smooth.
    • Add eggs one at a time, then mix in vanilla and sour cream.
  • Assemble the Cheesecake Bites:
    • Divide filling among muffin cups, filling each three-quarters full.
    • Add ½ tsp of berry sauce to each, swirling with a toothpick for a marbled effect.
  • Bake and Chill:
    • Bake for 15-18 minutes, until centers are slightly set.
    • Cool for 30 minutes, then refrigerate for at least 2 hours before serving.
