Ingredients
- 2 to 3 Beef Tenderloin Filets (6–8 ounces each)

- Garlic Powder, to taste
- 1 Baguette
- Extra Virgin Olive Oil (EVOO), for brushing
- ½ cup Sour Cream
- 2 tablespoons Dijon Mustard
- 1 tablespoon Worcestershire Sauce
- Salt and Pepper, to taste (for horseradish cream)
- 1 tablespoon prepared Horseradish
- Pomegranate Arils, for garnish
- Fresh Parsley or Cilantro, for garnish
- Chopped Chives, for garnish
Instructions
- Preheat your oven to 350°F. Slice the baguette diagonally and brush each slice with olive oil. Sprinkle lightly with salt.
- Arrange the slices on a baking sheet and bake for 5 minutes until golden and crispy.
- Season the Beef Tenderloin Filets with salt, pepper, and garlic powder. Heat olive oil in a cast-iron pan and sear the beef on all sides until your desired doneness (use a meat thermometer for accuracy).
- Remove the beef from the pan, rest for a few minutes, and slice thinly.
- Prepare the horseradish cream by whisking sour cream, Dijon mustard, Worcestershire sauce, horseradish, salt, and pepper together.
- Spread a layer of horseradish cream on each crostini, top with a slice of beef, add a dollop of horseradish cream, pomegranate arils, and fresh parsley or cilantro.
- Garnish with chives and serve immediately.
