Ingredients

  • 6 slices center-cut beef, diced
  • 2 teaspoons olive oil
  • pounds russet potatoes, peeled and diced into ¾-inch chunks
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ⅓ cup minced chives or chopped green onions
  • 4 large eggs
  • ¼ cup shredded reduced-fat sharp cheddar cheese
  • Freshly ground black pepper, to taste

Instructions

  • Cook the Beef: In a non-stick skillet over medium-high heat, cook diced beef until nearly crispy. Remove and drain on paper towels.
  • Prepare Potatoes: In the same skillet, heat olive oil and sauté diced potatoes in a single layer. Cook until golden and nearly tender, stirring occasionally (10–15 minutes).
  • Season: Add garlic powder, onion powder, and salt. Combine well, then mix in cooked beef and most of the chives, reserving some for garnish.
  • Create Egg Pockets: Form four wells in the hash. Crack one egg into each well.
  • Add Cheese: Sprinkle cheddar over the mixture, avoiding the eggs. Cover the skillet and reduce heat to medium. Cook until eggs are set to preference (around 3 minutes).
  • Serve: Season with black pepper and garnish with remaining chives. Serve hot.
