Description

Ingredients

Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tbsp Sriracha (adjust to taste)
  • 1 tsp honey

Chicken:

  • 1 lb boneless, skinless chicken tenderloins
  • 1 cup buttermilk
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 large egg
  • 1 tsp Sriracha
  • 1/2 tsp garlic powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 cup panko breadcrumbs
  • Canola oil (for frying)
  • Fresh parsley (chopped, for garnish)

Instructions

  • Prepare the Bang Bang Sauce:
    • Mix mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl. Set aside.
  • Marinate the Chicken:
    • In a medium mixing bowl, whisk together buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne (if using).
    • Add chicken tenderloins, ensuring full coverage.
  • Bread the Chicken:
    • Spread panko breadcrumbs on a plate.
    • Remove chicken pieces from batter, shake off excess, and dredge in panko, pressing gently to adhere.
  • Fry the Chicken:
    • Heat 1 inch of canola oil in a skillet to 365°F (185°C).
    • Fry chicken in batches for 2-3 minutes on each side until golden brown and cooked through (internal temp of 165°F).
    • Drain on a paper towel-lined plate.
  • Serve:
    • Toss fried chicken with bang bang sauce, garnish with parsley, and serve warm.

  • For a less spicy version, reduce Sriracha in both the sauce and batter.
