Description
Soft and chewy banana bread cookies made with ripe bananas, peanut butter, and oats. These quick and healthy cookies are perfect as a snack or dessert, with optional chocolate chips and walnuts for extra flavor!
Ingredients
1 ripe banana, mashed
1/2 cup peanut butter
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1 1/4 cups rolled oats
1/4 cup mini chocolate chips (optional)
1/4 cup chopped walnuts (optional)
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the Banana: In a medium bowl, mash the ripe banana until smooth.
- Mix Wet Ingredients: Add the peanut butter, maple syrup, vanilla extract, cinnamon, and baking soda to the mashed banana. Stir until well combined.
- Add Oats: Stir in the rolled oats until a thick dough forms.
- Incorporate Add-Ins: If desired, fold in the mini chocolate chips and chopped walnuts for extra texture and flavor.
- Shape the Cookies: Drop spoonfuls of dough onto the prepared baking sheet, flattening each slightly with the back of a spoon.
- Bake: Bake for 10–12 minutes, or until the edges are golden brown.
- Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
Substitute almond butter or sunflower seed butter for peanut butter if needed.
For a sweeter treat, drizzle the cookies with melted chocolate.
Store in an airtight container at room temperature for up to 3 days or refrigerate for longer shelf life.
