Ingredients

  • Kaiser rolls or French buns
  • Eggs
  • Fresh spinach
  • Heavy cream
  • Feta cheese, crumbled
  • Garlic cloves, minced
  • Cumin
  • Za’atar seasoning
  • Salt and black pepper
  • Olive oil
  • Unsalted butter
  • Sour cream (optional, for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F).
  2. Sauté Spinach: Heat olive oil in a skillet over low heat. Add minced garlic and cook until soft. Increase heat, add spinach, and cook until wilted. Stir in heavy cream, season with salt and pepper, and remove from heat.
  3. Prepare Buns: Slice the buns in half and press the center of each half to create a well.
  4. Assemble: Butter an ovenproof dish and arrange the buns. Fill each well with the spinach mixture, crack an egg into each, and sprinkle feta cheese around the eggs. Season with cumin, za’atar, salt, and pepper. Brush the edges with olive oil.
  5. Bake: Bake in the preheated oven for 15–20 minutes or until eggs reach your preferred doneness.
  6. Serve: Serve warm, optionally topped with sour cream.
