Description

Ingredients

  • 4 salmon fillets
  • 1 bunch asparagus, ends trimmed
  • 2 tbsp olive oil
  • 2 tbsp melted butter
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • Lemon slices, for garnish
  • Fresh herbs (dill or parsley), for garnish

Instructions

  • Preheat oven to 400°F (200°C). Cut four large pieces of aluminum foil.
  • Place salmon fillets in the center of each foil piece and arrange asparagus around them.
  • In a small bowl, whisk olive oil, melted butter, garlic, lemon juice, Italian seasoning, salt, and pepper.
  • Drizzle the sauce over the salmon and asparagus. Top with lemon slices.
  • Fold the foil to seal the packs tightly.
  • Place packs on a baking sheet and bake for 20-25 minutes or until salmon flakes easily with a fork.
  • Carefully open foil packs, garnish with fresh herbs, and serve immediately.

Notes

  • For variations, substitute asparagus with green beans or broccoli, or use lime instead of lemon for a citrus twist.
