Description

Ingredients

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mashed potatoes (leftover or freshly made)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup green onions or chives, finely chopped
  • 1 egg, beaten
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/4 cup grated Parmesan cheese (optional)
  • Cooking spray or olive oil

Instructions

  1. Preheat the Oven: Preheat to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
  2. Prepare Potato Mixture: Combine mashed potatoes, cheese, green onions, garlic powder, salt, and pepper in a mixing bowl. Mix well.
  3. Shape Potato Balls: Roll 1-2 tablespoons of the mixture into balls. Place on the prepared baking sheet.
  4. Coat: Dip each ball in beaten egg, then roll in breadcrumbs (mixed with Parmesan if desired).
  5. Bake: Arrange on the sheet, spray lightly with oil, and bake for 15-20 minutes until golden and crispy.
  6. Serve: Cool slightly before serving with your favorite dipping sauces.
