Instructions
Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- Combine crushed cookies with melted butter and press into the bottom of the pan.
- Bake for 8 minutes, then cool. Reduce oven to 325°F (163°C).
Make the Cheesecake Filling:
- Beat cream cheese until smooth. Add sugar, espresso powder, vanilla, and salt. Mix well.
- Blend in sour cream and Baileys until fully combined.
- Add eggs one at a time, mixing on low speed until just combined.
Assemble and Bake:
- Pour filling over the cooled crust.
- Bake at 325°F for 60 minutes, until the edges are set and the center jiggles slightly.
- Turn off the oven, crack the door open, and cool inside for 1 hour.
- Refrigerate for at least 4 hours, preferably overnight.
Prepare the Ganache:
- Heat heavy cream, Baileys, and espresso powder until simmering.
- Pour over chocolate chips and let sit for 1 minute, then stir until smooth.
Finish the Cheesecake:
- Spread ganache over the chilled cheesecake.
