Ingredients

  • ½ cup Baileys Irish Cream

For the Baileys Ganache:

  • ½ cup heavy cream
  • ¼ cup Baileys Irish Cream
  • ½ tsp instant espresso powder
  • 1 cup milk chocolate chips

Instructions

Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Combine crushed cookies with melted butter and press into the bottom of the pan.
  3. Bake for 8 minutes, then cool. Reduce oven to 325°F (163°C).

Make the Cheesecake Filling:

  1. Beat cream cheese until smooth. Add sugar, espresso powder, vanilla, and salt. Mix well.
  2. Blend in sour cream and Baileys until fully combined.
  3. Add eggs one at a time, mixing on low speed until just combined.

Assemble and Bake:

  1. Pour filling over the cooled crust.
  2. Bake at 325°F for 60 minutes, until the edges are set and the center jiggles slightly.
  3. Turn off the oven, crack the door open, and cool inside for 1 hour.
  4. Refrigerate for at least 4 hours, preferably overnight.

Prepare the Ganache:

  1. Heat heavy cream, Baileys, and espresso powder until simmering.
  2. Pour over chocolate chips and let sit for 1 minute, then stir until smooth.

Finish the Cheesecake:

  1. Spread ganache over the chilled cheesecake.
  2. Refrigerate for 15-20 minutes before serving.
