Ingredients
2 cups cooked chicken, shredded
1 ripe avocado, mashed
1/2 cup shredded cheddar cheese
1/4 cup green onion, chopped
1 teaspoon garlic powder
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
8 small flour tortillas
1 cup vegetable oil (for frying)
For Honey Lime Dipping Sauce:
2 tablespoons honey
2 tablespoons lime juice
1/4 teaspoon chili powder (optional)
Instructions
- In a large mixing bowl, combine the shredded chicken, mashed avocado, shredded cheddar cheese, chopped green onion, garlic powder, cumin, chili powder, salt, and pepper. Mix until well combined.
- To make the tortillas more pliable, heat them slightly in the microwave for about 20 seconds.
- Place about 2-3 tablespoons of the chicken-avocado mixture in the center of each tortilla and roll them tightly into flautas.
- Heat the vegetable oil in a skillet over medium-high heat. Once the oil is hot, carefully place the rolled flautas seam-side down into the oil. Fry in batches for about 2-3 minutes per side, or until golden and crispy.
- Remove the flautas from the oil and place them on a paper towel-lined plate to drain excess oil.
- While the flautas cool, whisk together honey, lime juice, and chili powder (if using) in a small bowl to make the dipping sauce.
- Serve the crispy flautas with the honey lime dipping sauce on the side.
Notes
For a vegetarian option, substitute chicken with black beans or refried beans.
To make them spicier, add finely chopped jalapeños to the filling or extra chili powder to the dipping sauce.
For a healthier version, try grilling the flautas instead of frying them, using olive oil for grilling.
If using corn tortillas, warm them first to prevent them from breaking.
