Description

Avocado Chicken Flautas with Honey Lime Dipping Sauce are crispy, savory, and creamy, filled with tender shredded chicken, mashed avocado, and melty cheddar cheese, served with a tangy-sweet honey lime dipping sauce. A perfect appetizer or quick meal.

Ingredients

2 cups cooked chicken, shredded

1 ripe avocado, mashed

1/2 cup shredded cheddar cheese

1/4 cup green onion, chopped

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

8 small flour tortillas

1 cup vegetable oil (for frying)

For Honey Lime Dipping Sauce:

2 tablespoons honey

2 tablespoons lime juice

1/4 teaspoon chili powder (optional)

Instructions

  1. In a large mixing bowl, combine the shredded chicken, mashed avocado, shredded cheddar cheese, chopped green onion, garlic powder, cumin, chili powder, salt, and pepper. Mix until well combined.
  2. To make the tortillas more pliable, heat them slightly in the microwave for about 20 seconds.
  3. Place about 2-3 tablespoons of the chicken-avocado mixture in the center of each tortilla and roll them tightly into flautas.
  4. Heat the vegetable oil in a skillet over medium-high heat. Once the oil is hot, carefully place the rolled flautas seam-side down into the oil. Fry in batches for about 2-3 minutes per side, or until golden and crispy.
  5. Remove the flautas from the oil and place them on a paper towel-lined plate to drain excess oil.
  6. While the flautas cool, whisk together honey, lime juice, and chili powder (if using) in a small bowl to make the dipping sauce.
  7. Serve the crispy flautas with the honey lime dipping sauce on the side.

Notes

For a vegetarian option, substitute chicken with black beans or refried beans.

To make them spicier, add finely chopped jalapeños to the filling or extra chili powder to the dipping sauce.

For a healthier version, try grilling the flautas instead of frying them, using olive oil for grilling.

If using corn tortillas, warm them first to prevent them from breaking.
