Description

Asparagus Pie is a light and flavorful spring dish featuring fresh asparagus, a lemon-flavored egg custard, and thyme. This savory pie is easy to make and can be served as a side dish or vegetarian main course. Perfect for spring gatherings or a light meal, it’s simple yet delicious, with options to customize the recipe to your liking.

Ingredients

  • ½ cup flour
  • 1 teaspoon chopped fresh thyme
  • ¾ teaspoon white sugar
  • ¾ teaspoon salt, divided
  • 1 pinch fresh ground black pepper
  • 1¼ cups milk
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 2 tablespoons butter
  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces

Instructions

  1. Preheat the Oven: Set the oven to 350°F (175°C) and grease a 9-inch pie pan.
  2. Prepare the Batter: In a large bowl, mix the flour, thyme, sugar, ½ teaspoon of salt, and pepper. Whisk in the milk, eggs, and lemon zest until the batter is smooth.
  3. Cook the Asparagus: Melt the butter in a skillet over medium heat. Add the asparagus and the remaining ¼ teaspoon of salt. Cook for 1-2 minutes, until the asparagus is dark green and coated with butter.
  4. Assemble the Pie: Transfer the cooked asparagus to the prepared pie pan and pour the batter evenly over the top.
  5. Bake: Place the pie in the oven and bake for 40-45 minutes, or until the top is puffed and the edges are browned.

Notes

  • For a richer flavor, add shredded cheese such as cheddar or Swiss into the batter.
  • Herb substitution: Try replacing thyme with fresh basil or parsley for a new flavor twist.
  • Storage: Leftovers can be stored in the refrigerator for up to 3 days.
  • Reheating: Reheat in the microwave for 30-45 seconds or in a preheated oven at 350°F for 10 minutes.
