Ingredients

For the Asian Noodles:

  • Olive oil
  • Green onions, chopped
  • Sesame seeds
  • Mushrooms (button or Portobello), sliced
  • Soy sauce
  • Honey
  • Chicken stock
  • Sesame oil
  • Sriracha sauce
  • Snow peas, trimmed
  • Fettuccine pasta

For the Asian Salmon:

  • Cooking oil
  • Salmon fillets
  • Salt & pepper
  • Honey
  • Soy sauce

Instructions

Prepare the Noodles:

  1. Heat olive oil in a frying pan over medium heat.
  2. Sauté green onions and sesame seeds for 2–3 minutes.
  3. Add mushrooms and cook for 2 minutes.
  4. Remove pan from heat and stir in soy sauce, honey, chicken stock, sesame oil, and Sriracha.
  5. Boil snow peas in a separate pot for 3–5 minutes, then drain.
  6. Cook pasta according to package instructions; drain.
  7. Toss snow peas and pasta with the mushroom sauce in the frying pan and heat through over medium-low heat.

Prepare the Salmon:

  1. Preheat broiler.
  2. Season salmon fillets with salt and pepper on the non-skin side.
  3. Heat cooking oil in a skillet over high heat.
  4. Sear salmon, non-skin side down, for 4 minutes, then flip and sear the skin side for 3 minutes.
  5. Mix honey and soy sauce, warming slightly to blend.
  6. Brush salmon with honey-soy mixture and broil for 3 minutes, basting midway if desired.
  7. Let rest for a few minutes before serving.

Notes

  • Swap fettuccine for rice noodles or soba for variety.
  • Adjust Sriracha to suit your spice preference.
  • Add more veggies like bell peppers, broccoli, or bok choy for extra nutrition.
