Description

This Apple Zucchini Bread is a moist and flavorful treat combining the sweetness of apples with the freshness of zucchini. It’s perfect for breakfast, a mid-day snack, or even dessert, with warm spices that fill your kitchen as it bakes.


Ingredients

1 cup grated zucchini (about 1 medium zucchini)

1 cup peeled and grated apple (about 1 medium apple)

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon salt

2 large eggs

½ cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium-sized bowl, combine the grated zucchini and apple. Use a clean towel or paper towels to blot excess moisture from the zucchini.
  3. In a separate large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, beat the eggs, sugars, oil, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Stir in the zucchini and apple mixture, then fold in the nuts (if using).
  7. Pour the batter into the prepared loaf pan, spreading it evenly.
  8. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

To store, wrap the bread in plastic wrap or place it in an airtight container. It will keep at room temperature for 3-4 days, or freeze for up to 3 months.

If you prefer a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.

For extra flavor, add dried fruits like raisins or cranberries, or mix in chocolate chips.

If you want a stronger spice flavor, try adding ginger or cloves.
