This Apple Zucchini Bread is a moist and flavorful treat combining the sweetness of apples with the freshness of zucchini. It’s perfect for breakfast, a mid-day snack, or even dessert, with warm spices that fill your kitchen as it bakes.
Ingredients
1 cup grated zucchini (about 1 medium zucchini)
1 cup peeled and grated apple (about 1 medium apple)
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt
2 large eggs
½ cup granulated sugar
½ cup brown sugar, packed
½ cup vegetable oil
1 teaspoon vanilla extract
½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium-sized bowl, combine the grated zucchini and apple. Use a clean towel or paper towels to blot excess moisture from the zucchini.
- In a separate large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, beat the eggs, sugars, oil, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Stir in the zucchini and apple mixture, then fold in the nuts (if using).
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
To store, wrap the bread in plastic wrap or place it in an airtight container. It will keep at room temperature for 3-4 days, or freeze for up to 3 months.
If you prefer a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
For extra flavor, add dried fruits like raisins or cranberries, or mix in chocolate chips.
If you want a stronger spice flavor, try adding ginger or cloves.
