Description
Apple Crisp Mini Cheesecakes combine the creamy richness of cheesecake with spiced apple filling and a crunchy oat streusel topping. These bite-sized fall desserts are easy to make, perfect for gatherings, and sure to be a hit with everyone.
Ingredients
- Crust:
- 1 cup graham cracker crumbs
- 1/4 tsp ground cinnamon
- 2 tbsp granulated sugar
- 4 tbsp unsalted butter, melted
- Streusel Topping:
- 1/4 cup all-purpose flour
- 1/4 cup quick-cooking oats
- 1/4 cup light brown sugar
- 1/2 tsp ground cinnamon
- 3 tbsp unsalted butter, melted
- Apple Filling:
- 2 medium apples, peeled and finely diced
- 1 tbsp lemon juice
- 2 tbsp light brown sugar
- 1/2 tsp ground cinnamon
- Cheesecake Batter:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 tbsp all-purpose flour
- 1 tsp vanilla extract
- 1 large egg
Instructions
- Prepare the Crust:
Mix graham cracker crumbs, cinnamon, and sugar in a bowl. Stir in melted butter until evenly moistened. Press the mixture into the bottom of paper-lined muffin cups. Refrigerate while preparing the filling. - Make the Streusel Topping:
Combine flour, oats, brown sugar, and cinnamon in a bowl. Stir in melted butter until coarse crumbs form. Set aside. - Prepare the Apple Filling:
Toss diced apples with lemon juice, brown sugar, and cinnamon. Set aside. - Prepare the Cheesecake Batter:
Beat cream cheese, sugar, flour, and vanilla extract until smooth. Add the egg and mix until just combined. - Assemble the Cheesecakes:
Spoon cheesecake batter over the prepared crusts, filling each about 2/3 full. Top with apple filling, gently pressing down. Sprinkle streusel generously over the apples. - Bake:
Bake in a preheated oven at 325°F (163°C) for 28-30 minutes, or until the tops are set. - Cool and Serve:
Allow cheesecakes to cool to room temperature, then refrigerate for at least 2 hours. Optionally, drizzle with caramel sauce before serving.
Notes
- For extra crunch, add 1/4 cup chopped pecans or walnuts to the streusel topping.
- Use muffin liners for easy removal and serving.
- Golden Delicious apples are recommended, but you can use any firm variety.
