Ingredients

  • Crust:
    • 1 cup graham cracker crumbs
    • 1/4 tsp ground cinnamon
    • 2 tbsp granulated sugar
    • 4 tbsp unsalted butter, melted
  • Streusel Topping:
    • 1/4 cup all-purpose flour
    • 1/4 cup quick-cooking oats
    • 1/4 cup light brown sugar
    • 1/2 tsp ground cinnamon
    • 3 tbsp unsalted butter, melted
  • Apple Filling:
    • 2 medium apples, peeled and finely diced
    • 1 tbsp lemon juice
    • 2 tbsp light brown sugar
    • 1/2 tsp ground cinnamon
  • Cheesecake Batter:
    • 8 oz cream cheese, softened
    • 1/4 cup granulated sugar
    • 1 tbsp all-purpose flour
    • 1 tsp vanilla extract
    • 1 large egg

Instructions

  • Prepare the Crust:
Mix graham cracker crumbs, cinnamon, and sugar in a bowl. Stir in melted butter until evenly moistened. Press the mixture into the bottom of paper-lined muffin cups. Refrigerate while preparing the filling.
  • Make the Streusel Topping:
Combine flour, oats, brown sugar, and cinnamon in a bowl. Stir in melted butter until coarse crumbs form. Set aside.
  • Prepare the Apple Filling:
Toss diced apples with lemon juice, brown sugar, and cinnamon. Set aside.
  • Prepare the Cheesecake Batter:
Beat cream cheese, sugar, flour, and vanilla extract until smooth. Add the egg and mix until just combined.
  • Assemble the Cheesecakes:
Spoon cheesecake batter over the prepared crusts, filling each about 2/3 full. Top with apple filling, gently pressing down. Sprinkle streusel generously over the apples.
  • Bake:
Bake in a preheated oven at 325°F (163°C) for 28-30 minutes, or until the tops are set.
  • Cool and Serve:
Allow cheesecakes to cool to room temperature, then refrigerate for at least 2 hours. Optionally, drizzle with caramel sauce before serving.

Notes

  • For extra crunch, add 1/4 cup chopped pecans or walnuts to the streusel topping.
  • Use muffin liners for easy removal and serving.
  • Golden Delicious apples are recommended, but you can use any firm variety.
