Ingredients

  • 2 pounds ground beef
  • 1½ cups crushed saltine crackers (about 1 sleeve)
  • 1 cup whole milk
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • ¼ cup all-purpose flour (for dredging)
  • 2 (10.75-ounce) cans condensed cream of mushroom soup
  • 1½ cups whole milk
  • 1½ tablespoons fresh parsley, finely chopped (optional)

Instructions

  • Preheat Oven: Set oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  • Prepare the Meat Mixture: In a large bowl, mix ground beef, crushed saltines, 1 cup milk, Italian seasoning, onion powder, garlic powder, cayenne (if using), salt, and black pepper. Mix gently to avoid overworking the meat.
  • Form Patties: Shape the mixture into oval patties, about ¾-inch thick.
  • Dredge Patties: Coat each patty lightly with flour, shaking off excess.
  • Brown Patties: Heat a skillet over medium-high heat and sear patties for 2-3 minutes per side until golden brown. Transfer to the baking dish.
  • Prepare Gravy: In a bowl, whisk together cream of mushroom soup and 1½ cups milk until smooth. Stir in chopped parsley if using.
  • Assemble & Bake: Pour the gravy over patties, cover with foil, and bake for 30-40 minutes, until patties are cooked through and gravy is bubbly.
  • Serve: Let rest for a few minutes before serving. Enjoy over mashed potatoes, rice, or egg noodles.

Notes

  • Cheesy Twist: Sprinkle shredded cheddar over patties in the last 10 minutes of baking.
  • Extra Mushrooms: Add sautéed fresh mushrooms for more depth of flavor.
  • Gluten-Free Option: Use gluten-free crackers and flour.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
  • Reheating: Warm in a 350°F oven or microwave on medium power until heated through.
