Description

Ingredients

  • 4 chicken breasts
  • 2 tbsp butter
  • 2 tbsp olive oil (or oil from sun-dried tomatoes)
  • 1 tbsp Italian seasoning
  • 1 tsp garlic granules
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/3 cup sun-dried tomatoes
  • 1/2 cup white wine or chicken broth
  • 1/2 cup heavy cream or sour cream
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tbsp cornstarch (optional, for thickening)
  • Fresh parsley or basil for garnish

Instructions

  1. Prepare the Chicken: Pat chicken dry and season with salt, pepper, and Italian seasoning.
  2. Sear the Chicken: Heat butter and olive oil in a skillet or the slow cooker’s browning function. Sear chicken until golden brown on both sides.
  3. Transfer to Slow Cooker: Place chicken into the slow cooker.
  4. Add Liquids & Seasonings: Pour in white wine or chicken broth. Add sun-dried tomatoes, garlic granules, and paprika.
  5. Cook: Cover and cook on LOW for 90 minutes to 2 hours, or until chicken is fully cooked (165°F/75°C).
  6. Finish the Sauce: Stir in heavy cream or sour cream, Parmesan cheese, and fresh herbs. If thicker sauce is desired, add a cornstarch slurry and cook an additional 10 minutes.
  7. Serve: Garnish with extra Parmesan and herbs. Serve over pasta, rice, or mashed potatoes.
